If you put shortening in the candy melts to make them thinner (easier to dip) will that make the chocolate melt at room temperature? Do you have to keep the cake balls refrigerated afterwards?

Nope never had a problem melting. I do suggest you refrigerate it though.

So, refrigerate to store, but its ok at room temperature when you give them away as gifts or anything?

Exactly. When I give them away, I always tell them to store it in the fridge. It's ok in room temperature but let them know to refrigerate it asap.
