Trying To Decide On A Filling

Hi there!

I've never really dabbled in filling my cakes yet and was hoping to maybe give it a try for my daughter's birthday. The cake is going to be french vanilla and covered in buttercream and fondant. Are there any general rules for filling cakes. What has to be refidgerated? And how long can the cake sit on a table?

Any suggestions or advice would be sooo appreciated!!!
