I have recently fallen in love with the WASC recipe and have been using regular flour. I have the opportunity to purchase a 50lb bag of cake flour from my employer at a reasonable price (at least in my opinion) of $21.20. What flour do the rest of you use in WASC cakes?

Thanks!

I say definitely all purpose. I would only use cake flour if a recipe called for cake flour. HTH

All purpose, bleached. I usually use unbleached but for a white cake, bleached.

Buy the 50lb bag of cake flour once you use it you want ever look back. I have been using it for years. It is also excellent in pound cake and other scratch cakes.
