HI!

I have a question, and not sure if I posted it in the correct forum. I have the recipe for modeling chocolate that is in the Wilton Cake Decorating Books, and that's the one I use.

I was recently watching an episode of " Amazing Wedding Cakes " and the chef was using modeling chocolate. She told the audience that Modeling Chocolate was, you mix chocolate water and sugar... or chocolate and a simple syrup mixed together.

Does anyone know the exact recipe she's talking about?? I would love to try it.

I use 3 Tbl. (1 1/2 oz) of corn syrup to 4 oz. of dark chocolate...stir like crazy until it comes together in a smooth paste then refrigerate until firm...works great for me!

Yep.... that's what I use too!! I don't really know what they were talking about on television show. I know when you add water to chocolate... you have a MESS!! (LOL)

I don't think it's a great idea to add water to melted chocolate but if there is such thing, I'd love to know about it.

I had a chat with Toba Garrett (didn't know it was her until later on) and gave me her recipe. Check her website out.
