Is it possible, and safe for my fixer.....to make MMF in my kitchenaid stand mixer? I didnt know if it would be too thick. I am a "newbie" to fondant making. Thanks!
Yes, it's possible, safe and FAST and EASY! Just use the dough hook and grease everything up with shortening before you start (bowl, hook, spatula). Try it out and see how great it is!
Never turn the mixer up past the first or second setting when you're using the dough hook....basically treat the batch of fondant like you would a batch of bread dough.
I make my MMF in my kitchenaid every time, it's the easiest and cleanest way.
I coat my bowl that I'm melting my marshmallows in with Crisco.
I coat my mixer bowl with crisco and put in 1/2 of my powdered sugar. When the marshmallows are melted I pour them into the mixer, stir it a little, and then let it mix. Once that's all mixed, I mix in the rest of the powdered sugar.
Just remember not to turn the mixer up any higher than the 2nd setting (like Texas_Rose said). I usually never turn it up past the first setting.

Yes you will still have to knead it by hand when you are done. I grease my hands, pour powdred sugar on the counter, dump it out of the mixer, and knead till it is done.

Just tried this the other day and let me tell you, I will never grease up my counters again!! LoL. It was so easy and clean up was negligible. AMAZING! Good luck to you! Oh, and yes, make sure everything is thoroughly coated in shortening.
I was out of crisco and coated all my utensils with canola spray and it worked like a charm. That's all I use now! I saw no difference in the fondant. I even spray my hands now.

AIf you have a Bosch it works even better. I make double batches in mine and don't even knead it after.

I Only make half-batches, as I don't use that much. It only takes a few minutes & still works great. A quick rinse of everything immediately afterwards, & it cleans up like a dream. Great inexpensive stuff for hobby bakers.
