I am attempting a bridge cake (eeeeeek!) and it is the 59th street bridge in NY (double eeeek!)

I am pretty new to cake decorating at this level. My sculpting skills are getting there, but I've never actually taken a class so I learn from reading forums and trial and error when it comes to product use.

What can I use that is pipeable and dries strong. Or, I guess something I can roll out and work with (like fondant) but will dry much more stiff and sturdy so I can use it as the cables and structure of the bridge.

Thank you!

Gum paste dries much harder then fondant or you can us 50/50/ mix of fondant gum paste. Royal is pipeable and dries hard but it is very fragile.
