I promised to do a friends daughters 1st b-day cake, months ago, and it's due this Saturday. Unexpectedly, my Grandmother died this morning and I will have to fly home on Friday, for a Saturday funeral. If I made the cake on Wed, decorated it on Thursday and delivered it Thursday evening, will it hold up okay? The cake is a vanilla cake with a chocolate buttercream filling, covered in fondant. It's 2 tiers (10 and 8 inch), with the giant cupcake on top of that. I'm not sure what I should do. I have notified my friend, but this is the first time something like this has happened to me. I'm a little stressed out. Any helpful ideas or suggestions would be greatly appreciated.

It should be fine decorated in Fondant. I have had a few times when I have had too many cake orders for a Sat. and had to finish a couple for Thursday night. The customers rave on how moist the cake is and everything so it held up great. The fondant will actually help hold in moisture as well.
