I am doing a cruise ship cake and was wondering what you guys use for the ocean? I have some ideas but would love your input. Thanks

You have a number of options available to you. Here are a few.

1. Royal Icing on your board. Use your spatula to move the icing around to form peaks.

2. Buttercream Icing. Same as above for the technique.

3. Piping Gel. Tint various shades of blue and green to create the look you want.

4. Poured Sugar. this is probably the most difficult. Isomalt that's tinted and poured out on the board.

To add to the list do some ice cubes on a seperate surfae, pour isomalt over them ,then when it setstake it off the melted cubes, lay it around your cake

If you did just sugar and water (with blue food color) and boil to hard-crack and pour it tends to break all apart and look super cool.

Blue Jello works too. Twice the jello for the water so that it won't melt as easily.
