I am putting fresh sliced peaches in the middle of my cake, do they need to be set in lemon juice first or will the be ok?

you can coat in lemon juice, but if you are keeping the cake refridged they wil be fine
The citric acid in the lemon juice will help them keep from oxidizing (turning brown).
