filling for a wedding cake? I've seen that it's been offered by some cake places.

How would I get the Tres leches to be more like a filling than something to soak the cake with?

What about the creme brulee given that it's a custard? Can I use a brulee recipe the way it is or do I have to add something to make it thicker?
