I have a wedding cake due tomorrow. The 3 tiers are iced , filled and in the fridge because they have cream cheese icicng. I am going to take them out tonight and cover them with fondant.
1. Should I bring them to room temp. first?
2. Should I put fondant decorations (they are long rolls that will be like a wavy line on the cake) on tonight or tomorrow afetr it comes back out of the fridge?
I am afraid the fondant will be moist and the decorations will slide off.
Let it come to room temp. and before applying fondant flash freeze for about 8 minutes. then dampen with wet paper towel or mist and apply fondant. I don't refrigerate after putting on fondant, but if you do, I would wait to put decorations on, you could have some serious issues with condensation.
