What's A Good Filling For A Dark Chocolate Wedding Cake?
Decorating By DollyCakes Updated 22 Sep 2009 , 7:18am by Chippi
Something besides standard buttercream....anyone have anything fabulous to offer up???
Or raspberry purée, or raspberry jam, or raspberry anything! It has to be my FAVORITE combination... that being said, mint is also nice!
Hazelnut ganache, coffee buttercream and of course raspberry anything--maybe even a chocolate raspberry ganache! Yummy
Remember to make an icing dam so the filling does not ooze out.
Raspberries
Strawberries
Apricot
Orange Pastry Cream
Pastry Cream
Almond Frangipan
Vanilla Custard
Bavarian Cream
Hazelnut
Whipped chocolate ganache

I fill my dark chocolate cakes with a caramel filling. It uses butter and brown sugar and cream (?? can't remember because I don't have recipe in front of me). Then after I melt all that together, I incorporate powdered sugar so it makes a great, thick filling that is divine!! This is a caramel filling that you would think of, say in a snickers bar..
I would stay away from the orange with dark chocolate, or mix the orange into buttercream. Some people (aka people like me ) don't like the combo. but chocolate with raspberry sounds wonderful! Or, keep it simple and do chocolate and french vanilla. Or I make one with bailey's buttercream.
I like chocolate with almost anything..
marscapone filling
orange cream cheese
strawberry cream cheese
raspberry cream cheese
whipped caramel filling
One of my favorite fillings is a pistachio buttercream. It's a simple SMBC base with chopped, toasted pistachios folded in. It's SUBLIME with a rich chocolate cake and no one will expect a pistachio buttercream, but when they taste it they'll go, "Holy crap I've died and gone to heaven!!"

Dang...I think I just drooled on my keyboard!!! YUMMM!!!!
Orange Ganache, made like a white chocolate ganache but with some Drambuie Orange Liquor for flavoring....
Chocolate ganache with Godiva Chocolate Liq...yum (or Bailey's Irish Cream, or Kahluaha)
All those sounds good, I like the ganache idea, I am making some for a baby shower, this weekend with Kahluaha in it Keep in mind that some people are allergic to nuts
Ganache is a good place to start, especially given its consistency. You can add just about anything you like to it: fresh raspberry or strawberry puree, boiled orange puree with orange liqueur, ground hazelnuts or almonds, other liqueurs.
I then use the ganache to cover my cake too before covering in fondant. It gives a really smooth surface to work on.
Good luck deciding!

I noticed I made a mistake in my earlier response... this filling is a thick filling NOT like what you would find in a snickers bar... sorry.. it is not ooey gooey... it's good and stable...
