I want to make the cake that is thinner in the middle but wide on top and bottom.. on Amazing Wedding Cakes C Gerren called it his corset cake.. of course when i search corset, I get the bustier kind.. anyone have any tips or infomation on carving a cake like this?

PS. I saw how they did it.. (two separate cakes) but I'm sure there is a way to do it with just one cake

Just chill the cake to firm it up, then start cutting it a little bit at a time until you get it the shape that you want. Don't narrow it out too much in the middle, though. The one they did on the show was supported by boards in the center. Without that it might collapse if you cut away too much. I've done shaped cakes like that before, and it should work fine if you're careful.
