Can I Refrigerate, Or Do I Have To Freeze?

I have a wedding cake for a friend this Saturday. Since caking is not my full time job, and I have the day off today, I decided to bake all the layers. I want to be able to torte, fill and crumb coat Thursday night, and then finish Friday night for an early Sat. delivery. Do I have to freeze the cakes, or can I just refrigerate them until Thursday?

I would freeze them. Freezing makes them more moist, but putting them in the fridge makes them dry out.

Okay...thank you for the quick reply. This leads me to a few more questions though, as I have never frozen my cakes before. How long do they need to thaw? Should they be left wrapped while thawing?

Yes you let them thaw wrapped. It doesn't really take that long for the cake to thaw, usually about an hour in the counter.
