I know somewhere there is a post about this. But I couldn't not find it anywhere. I thought I had saved it but guess not...Anyway

How long can you keep buttercream in the refrigerator before it's "bad". How long can you keep buttercream in the freezer before it's "bad".

Id say a few days in the fridge. in the freezer about 2 weeks. Are you making it just butter and icing sugar? if you add dairy (like cream etc) It would be ALOT less

Yeah it's just Butter, powdered sugar and vanilla. So just two weeks in the freezer?!? I guess I was hoping for longer icon_smile.gif

If putting into a deep freezer im sure it would be fine for over a month... Maybe 2? about a week in the fridge sorry

I've never frozen buttercream so I can't speak to that. As for the fridge, I don't put a specific expiration date on it, but I know I've kept buttercream for a couple of months and it still smells and tastes just fine. The only part that can go bad is butter and milk and it's in the fridge so I don't know what the problem would be. All that sugar acts as a preservative allowing you to even keep it on the counter for a few days. I say "no worries" about keeping it tightly covered in the fridge for a couple of months. Just be sure to taste it before you use it again.

I agree with puff. Buttercreme is pretty indestructible.

Thanks everyone. I only had it in the fridge for less than 24 hrs. Then I put it straight into a freezer bag and in the freezer. I did plan on "bringing it back to life" when I went to use it. I have kept bc in the fridge for like 3 days before and it be a little chunky I guess you'd say. It was crusting bc so I guess I should have known that icon_smile.gif. I just added milk and put the mixer to it and it came back and tasted just as good as the day I made it.

my buttercream is made of pasteurized egg whites and butter' how long can that one hold in the fridge?

i would say 3 days in fridge max ie consume within 3 days.  I used to work in kitchens and egg mayonnaise was given a 3 day expiry.  I know its diff product but still egg.

 Answers I found varied from 3-10 days in the refrigerator for IMBC's, but they all stated that freezing was a viable option.
