Rose Petals Dipped In Sugar?

I believe this is an old type of technique but I don't know anything about this.

My client wants rose petals on top of her wedding cake dipped in sugar. I have read about this kind of technique in one of my aunt's cookbooks, where you dip each grape fruit in egg white (?), dip it in sugar, & then put in the freezer. (As far as I can remember)

Does this also apply to rose petals? And what is really the process when doing this?
