I baked Wednesday, crumb coated late Wed nite (SugarShack BC), and covered with MMF last night (Thurs). Am I OK for Sunday afternoon, or is that pushing it? I could bust out another cake today if needed.
You should be just fine..I do my wedding cakes in stages also so the whole process is 3 days also.The fondant will keep the moisture in.
Yes. A properly covered fondant cake is supposed to retain freshness for up to seven days. hth
