I am looking for a receipe that has coffee added to it. I want to make a cake for one of my CNA's who always has a cup of coffee in hand. So therefore; i am wanting to make him a cake for his birthday and want one that has coffee added to it....does anyone have a good strong recipe..??

Try WASC (or your favorite white/yellow cake recipe) and use coffee in place of 1/2 to all of the water.

WASC is White Almond Sour Cream, it's a cake mix extender and listed in the recipe section on this site (sorry I'm not good at links). Replace the water in the recipe with brewed coffee, I did this for a friend's birthday and it was delicious. Also, replace a few tablespoons of the liquid in your buttercream for a coffee flavored filling.

What type of icing do you work with? If you use a PS BC, then instead of your regular liquid, use this -

Take the equivalent amount of water and heat it almost to the boil
Add some espresso powder, stir well, and allow to cool to room temperature

Add to BC as your normal liquid.

On a personal note, I've already crushed chocolate-covered espresso beans and sprinkled them on top of a plain BC filling. The cake-eaters loved it.
