What is your personal favorite resipe for cupcakes and their fillings?

I wanna know, too.

I want to do cupcakes that set me apart from the bakeries, so I was thinking of trying things like an Oreo on the bottom or a Reese's Peanut Cup baked inside...

Macsmom, you continue to amaze me with your creativity!!
I would give my eye teeth to taste a peanut butter cup cupcake!! Since my son's peanut allergy diagnosis, I'm going thru withdrawl!! LOL!

I just made some white cupcakes with Oetker Pistachio mousse inside, regular BC frosting, and they were so delicious!! Simple, but delicious. icon_smile.gif

The blog site Love and Olive Oil has some wonderful cupcake recipes. She tends to be more vegan but I have tried the Blackberry Vanilla Almond and it is wonderful.

What tip do you all use to fill your cupcakes....I have just been using a # 12, but don't seem to have quite enough filling...

Another thing is just cut out a well and fill or use an apple corer and then place a little plug of cake on top or eat it.

The Bismark Tip works great for cupcakes.

I know, which is awesome, but there are sooo many and they are in random order, it's really hard to narrow anything down.

LOL!! Eating it gets me into trouble!! I'd have to go to the gym every day if I started doing that!!

Just found a site that says Wilton makes the bismark tip...I haven't bought 1M yet either...I guess now I'll try both!

As far as recipes go, I like to keep things simple, but I was thinking of a chocolate cupcake filled with a cream cheese filling....sort of like a marbled brownie flavour....once I come up with a recipe for the filling, I'll post it. icon_smile.gif

When you use a 1M or whichever tip to fill...I've tried a #10,so I guess too small? and an 804,which I thought was too big....doesn't it just either clog(smaller one) with cake...or crack the cupcake(the large tip)...I tried filling with mango curd,and felt I didn't get much in (these were standard size)...so I sent a jar of curd "on the side".....Help!

I haven't had any problems with clogging using the 1M tip, except when I didn't crush the Oreo cookies enough for my Cookies and Cream filling icon_lol.gif

I find it only cracks the top if I try to put too much filling in. Yes, I think a 10 tip would be too small and I'm not familiar with 804.

I have had clogging problems with the Bismark tip...the opening is just too small. I think it would only work with a smooth filling like Bettercreme, Buttercream or jam, but not if anything is mixed in. It also doesn't work with a thick filling...I tried it for the marshmallow cream filling in my S'mores cupcakes and I could barely squeeze the marshmallow cream through the bismark tip as it was too thick and sticky.

The 1M tip works much better for me. I don't cut out a core, I just stick the tip into the top of the cupcake and squeeze the filling in. I stop when I can just barely see the top of the cupcake start to expand. If you put too much filling in, the top expands to the point of cracking the top open.

Cupcakes and filling I recently made and uploaded are S'mores cupcakes with marshmallow cream filling, Cookies and Cream cupcakes with crushed Oreo/Bettercreme filling, Strawberry Shortcake cupcakes with crushed strawberries/Bettercreme filling and Malted Milk Ball cupcakes with Malt/Bettercreme filling. My favorite cupcake filling is Bettercreme. It's whipped cream taste and texture is perfect for fillings, especially when mixed with fresh fruit or cookies or other yummy additions icon_biggrin.gif
