I've made a few snake cakes using a 12" ring mold. Cut the circle in half and position the parts to create an "S". It makes a somewhat short fat snake. You could use 2 ring cakes for a longer snake and more servings. Carve the ends to be head and tail. Decorate to resemble the snake of your choice.

The tongues are cut from a red plastic lid. That could be made from fondant or gumpaste.

complete with party hat and that rolled up paper noise maker thing
i would use 3" thick rounds maybe 10" or whatever size depending on how many servings you want. carve the edges so they're semi circle and stack the layers as high as you want so it looks like a curled up snack with a head on top made from rk or whatever
or you could go ahead and stack several layers of rounds and carve a spiral line all the way around ..i'm not very good at explaining it, lol, but this is what i first pictured when you said snake cake. it really shouldn't be difficult to carve.
i would do maybe 3 of the same size rounds and then 2 more on top smaller sizes with the head coming out of the middle to balance out the look. or the head on the side and a sign or soemthing in the middle with happy bday or whatever on it
