Use your spatula to make random swirls and pull the spatula away from the cake to make the icing stick out.

You should see if there is a video on youtube about how to spackle a house...LOL usually we want smooth but that rustic texture has charm and looks really great.

On the wedding cake that is in my pics (the one with the white flowers) I used the back of a table spoon to swirl and peak the icing.
