Attaching Fonadant Flowers To Wedding Cake?

Hi All,
I am making the wedding cake for my friends wedding (my first wedding cake). The cake will be three tiers with fondant roses coming down the side of the tiers. I was wondering how I should attach the roses? I have made a similar cake in the past and made the roses on toothpicks and attached them with the toothpicks but that cake was just for family and friends. Are toothpicks ok or should I make the roses on wire?
Also, should the roses be removed prior to cutting and swerving the cake? I am worried about someone biting into a piece of wire/toothpick. Any advice is greatly appreciated.

If you are covering the cake with fondant as well, the you can use royal icing to attach them to the cake, I would start from the bottom and work your way up as this will support your roses.
