How many days can a cake iced in ganache and covered in fondant sit out for?

I'd say 3 days tops.

Ganache can sit down in room temp for 3 days or so, I just don't let my cakes with filling sit out in the counter for more than a day.

It can be sit out for 3-4 days. But I read in another forum that the Environmental Health Officer who came to check the premises has said that it can be sit out for 7 days. That is because you boil the cream and add it to chocolate which has a high quantity of sugar. icon_smile.gif
