I am making a carrot cake, I would like to fill it with creamcheese icing and cover it with buttercream. Then I would like to freeze it for a day or two, will it thaw properly?

It should thaw just fine - I would just make sure that you allow it to thaw completely before you take the wrappings off, so that the condensation doesn't absorb back into the cake.
