How can I prevent cracking fondant and gum paste?
What brands are the best to use. I used Wilton ready to make but I always having problem.

with gum paste you need to work *super* fast. not so fast with fondant. but if it starts to dry out, then you will have these problems. a little bit of crisco rubbed in might help to save it.
i think over kneading it can lead to problems too.
is it wilton fondant you use? repordtedly fine to work with, not so good to eat - there are loads of other brands to try (like fondx, or satin ice, chocopan is a chocolate version - you might need to go online to find them) or make your own - mmf and mff are popular here.
i havent heard anything bad about their gumpaste, but you can make your own too - nicholas lodges recipe is popular.
