Please help. I have several cakes that I will be doing around the couple of weeks in November. I am trying to plan them now so that I have plenty of time to get everything done. My first question far in advance can I make the fondant accents. My hope is that I can make all the accents in advance and when it comes time to make the cake I can just set them on the cake. Also I am making my fist cake for money!!! All I know so far is that it needs to feed 50. Can someone tell me how much cake I will need. I've never done a cake that feeds that many.

Without knowing the design of the cake, here are some combinations that will serve 50. Based on the standard 2x2x2" serving:

A single layer 12x18 serves 54.

Based on the standard 1x2x4" serving:

A double layer 11x15 serves 70.
A double layer 9x13 serves 48.

A double layer 12" round serves 56.

Double layers, 6/10 serves 12/38 = 50.
Double layers, 8/10 serves 24/38 = 62.
