What is the best icing consistency for piping scrolls and small details?
What icing will you be using? If it's royal icng, i would suggest stiff peak consistency.
It so depends on the icing you are using and your hand strength.
For shortening based buttercream a medium to medium stiff is good.
For royal just short of stiff peak. If it hurts your hand to pipe it is too stiff.
I've started using canned icing because i find it much smoother and easier to pipe with. It borders on too soft, but you could always add p/s to stiffen it up some...
