I am taking the Wilton cake class and would like to know what is the best way to freeze a cake? I have a bunch of unfrosted cupcakes this week and I'm sure I'll have a cake next week. Thanks for any input!!!
I would freeze them without any icing on them. I like to wrap mine in a couple of layers of saran wrap followed by heavy duty foil. I then thaw them out in the refrigerator still in the wrappings. Even if you thaw outside of the fridge do not take the wrappings off until it has defrosted otherwise you will have condensation form on your cake.
I'd recommend no icing, also. Defrosting in the refrigerator over night will make the cake moist (but still firm) and ready for icing in the AM.
