can someone please recommend a great baking book that has recipe for the inside of the cake, that i can carve and use for fondant? i would like it to be from scratch.

I love the Cake Bible. Just great, well tested recipes. I would recommend the pound cake recipes for carving work.

I would also recommend Lindy Smith's book 'Cakes to Inspire and Desire' I personally like to add abit of milk to her madeira cake recipe to make it abit more moist but both the chocolate cake and madeira cake recipes are really good and give you a great consistency for carving. They also keep very well and get better if you let them mature for a few days so I can bake a cake on Tuesday and by Saturday/Sunday they'll be perfect for cutting.
