Wondering if anyone can help me on something I've got coming up. It's a business setting, docters, and about half are vegetarians. They are wanting to do appatizers even though it will be dinner. I have no one in my family who is vegetarian so I have nothing..please help!

How about:

1. Bruchetta topped with chopped tomato & onion, cilantro
2. Toastettes topped with pesto and thinly sliced grilled seasonal vegetables

If I think of others, I'll pass them along. But I can't wait to see what other's suggest! icon_smile.gif

Sliced tomatoes topped with mozzerella and a bit of fresh basil.

Boiled baby new potatoes with a herb butter glaze.

Stuffed baby bell peppers.

Goat cheese on crackers.

Veggie samosas with mango chutney.

I'll keep thinking...

I was thinking an english muffin base with a little mayo, tomato an basil on top, cucumber tea sandwiches, and some stuffed baby red potatos, but I was affraid that these weren't going to be filling enough. Think that they might be?

Stuffed Mushrooms
Shot glasses of gazpacho
Onion and/or mushroom tarts
Marinated Olives
Fried pumpkin or butternut squash ravioli
Spiced nuts
Roasted chick peas

feta cheese - thyme bites in puff pastry
portabella mushrooms with sundried tomato and sauted onion on bread grilled with olive oil.
Cheese ravioli that's been breaded and fried with dipping sauce on the side
ricotta cheesed - spinach stuffed shells with sauce
butternut squash soup in a double shot glass. You could do 3 different soups presented this way.
eggplant parmasian in mini form
grilled asparagus tossed in olive oil and sprinkled with herbs and parm. cheese
steamed asparagus served in a glass (kind of like a large shot glass) with hollandaise sauce
grilled fish on a toasted sliced cheese bread topped with an drizzle of sauce
deep fried breaded veggies
puff pastry filled with a creamy risotto and make it savory.

Cut cucumbers into 1/2" to 3/4" thick slices; scoop out a hole in center, fill with tuna or better yet crab salad.
Patio or other small tomatoes; cut x center & stuff w/cream cheese (flavored if you want)
Toast small rounds of bread; top w/tuna, egg or crab salad
hard boiled/deviled eggs

If you know that people are vegetarian, I would avoid fish-based recipes. All the veggies I know don't eat fish either. Of course, some may also be vegan... baby carrots anyone..?!

Mayo has egg yolks in it. Will they eat that?

Some of my fav's are:

Stuffed Mushrooms
Veggie Samosas for sure (if you need help on how to make these, just pm me)

There are so many options. If I were you I'd google appetizers and that way you could get recipes if you need them as well. Good luck!
