How To Get Bc Or Cream Cheese Icing Smooth???

Hi all,

This is my first post and I hope you all can help me. I can't for the life of me get my icing as smooth as some of you do in these pictures. I am making a cake for a friends bridal shower and she likes it better without MMF. YIKES!!

Any help or advice you can give is much appreciated.

I use a bench scraper instead of a spatula for the sides. Then wait for it to crust and so the Viva paper towel method to smooth. I read about this here and couldn't believe it until I tried it myself. There's some great videos on you tube that show it being done. It's really amazing. It almost looks like fondant.

After the buttercream crusts, I use a small (5" or so) high density foam paint roller from Home Depot. It works incredibly well. I haven't ever tried to use the Viva method but let us know how it goes! Be brave!! icon_biggrin.gif

I use the Viva paper towel method .... must be Viva and bc must be crusted a bit, 15 minutes usually does the trick. I think next time I am going to try the roller too icon_smile.gif
