A friend of mine wants a vanilla cake with cream cheese frosting. She wants it to be covered in fondant. I make my own mmf.

She wants the cake on a Sunday afternoon and we will be at the party.

We were just offered a weekend at a friend's cottage.

So, can I make this cake on Friday morning and have it keep until Sunday? I wouldn't worry if I was using buttercream. It's the cream cheese frosting that has me worried.

Should I keep the cake in the fridge?
Keep it at room temperature?
Forget the cottage and prepare the cake SUnday morning?

I'm not sure what the correct answer is, I would say definitely refrigerate it. I've made cakes frosted with a cream cheese frosting, stored in the fridge (carrot cake) and it tasted just fine 3 days after baking, but I haven't used it as a filling yet. From what other CC's have posted in other threads, some people refrigerate mmf with no problems. Good luck getting an answer, sorry I can't really help icon_sad.gif
