How Far In Advance Can You Make Fondant And Gumpaste Items?

I'm making two cakes for next Friday (Aug 14th) and was wondering how far in advance I can make the sculptures or decorations to add to the cakes, if they're being made out of fondant or gumpaste? Also how long will a cake covered in fonant last (does it need to be put in the fridge)Thank you for your time and help! Stefanie

I've made sculpted fondant pieces a month in advance if I have the time. I have a glass curio cabinet in my business kitchen that I store them in so that they won't get dusty and it dries them nicely if I leave the light on in the cabinet.

I use MMF (marshmallow fondant) and I don't refrigerate any of my cakes per my HD requirements.

I usually just cover my cakes with fondant the day before an event.

Depending on your fillings you may not need to refrigerate your cake.

Thanks Deb! They're just going to be standard cakes, nothing fancy for filling. I appreciate your suggestions and advice!
