I am doing a tropical themed cupcake tree and I am looking for a kiwi filling for the white cupcakes.

I found this online- no idea how good it is though.

We had too few kiwis and made only about four and a quarter cups of kiwi per pie.

Add one cup of white sugar, three tablespoons of cornstarch, and a quarter of a teaspoon of salt. Mix well. Cook the kiwis on low heat until two tablespoons of butter melted into the kiwis.



I also thought I saw a kiwi jelly at the gourmet food store here. If you have one in your town that may be worth investigating. THe only other thing I can think of is to add a small piece on top of the cupcake. They are kinda watery to puree...
