How To Make Tall Chocolate Curls

I'm trying to figure out how to make tall, thin chocolate curls like those seen in this picture:

I've read some things that talk about short chocolate curls, recommending melting down the chocolate and reforming in a block (like in a loaf pan), then using a cheese slicer to peel the chocolate. But with such tall, thin curls what would be an appropriate instrument or method? A large knife?

If anyone has any helpful hints, that would be wonderful. Thank you!
