Sponge Cake Question.....

I just watched Cake Boss last night, and was amazed at how they handled the sponge cake! Wow! He just picked up a large sheet by the sides and placed it on the cake! Does anyone know if this is just any regular sponge cake? I've never made one, but it looks alot more durable than my regular WASC.

I've made spongecake and it was absolutely durable.

Most spongecakes are very durable and can be handled quite roughly.

i use a victoria sponge, and although im careful, it it pretty resiliant! something like a pound cake or maderia will do even better.
