Question About Smbc

I made this for the first time this weekend (check pics!), and am amazed at the awesomeness. Question about how to keep it, though: does it keep in the fridge just as well and as long as regular BC cakes/cupcakes do? Are there any special instructions? I just didn't know, because of the egg whites and all....

Coolness! Yes, best stuff on earth. I don't know I did without it for so long. I don't keep it for more than a couple days, but I only make what I need each time. That said, I did make some and brought it home once, it sat in a ziplock for about 2 weeks, and it was fine. I wouldn't recommend it for paying orders though.

It seems to behave best right out of the bowl. So when I am ready to fill/ice, I make it right then and there. If I need more than one batch, I make it a day ahead of time.

it's great stuff, isn't it icon_smile.gif?
when you fridge it, it's going to get pretty hard.
let it come to room temp before serving so that you get more of the flavor taste instead of the butter taste (my odd little family likes it straight from the fridge, lol....).
