Hi everyone! I remember, months ago, seeing a post about adding peanut butter to one of the cooked buttercreams and I can't find it anywhere. I have a great peanut butter icing that people love, but I want to try something a bit lighter. I would just experiment, but I hate to potentially waste butter when I KNOW that I saw someone mention this before!
Can anyone help me?
Thanks,
Jen

If you already know how to make SMBC, just make it up, add your vanilla and/or almond, then just add PB. Don't add too much or it loses all structure and won't hold a shape in any kind of warmth.

I really like the Wilton PB icing. It doesn't crust, but I think it is really light.

Here is the recipe I always use....it is EXCELLANT and light and fluffy. I add more PB than it calls for though so just do it to taste. Enjoy!

Thanks everyone. Jen, I'm going to try that recipe in a few minutes - it sounds just like I was looking for and I think the brown sugar version will be much better than just adding peanut butter to a white sugar recipe. Thanks so much!!

Jen,
WOW! Thank you, thank you, thank you! I tried that recipe and it's delicious. I don't even want to make the cupcakes to put the icing on now - I just want to eat the icing by itself. lol
Thanks again,
Jennifer

LOL...you're welcome! That's my favorite recipe. I always make extra for snacking, especially since I am 8 months preggo! No PB icing is safe around me!! Muah ha ha....

Edna - thanks! I had forgotten about that video. As soon as I saw it, I remembered though. It does sound very good. I'll have to try it next time.
