Could I substitute 1 whole egg for two egg yolks in this recipe? I hate to waste the egg whites but really like this recipe.

6 egg yolks
2 cups butter, softened
2 1/8 cups white sugar
7 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons vanilla extract
I think it will change the recipe. The yolk is all fat whereas the whites are protein. But if you don't experiment, you'll never know for sure. If it was me, I'd make a half batch. Some of my best surprises came from experimenting> Good luck!
I think I will try it to see. I will do it for cookies I just make for fun though, don't want to risk it when I really need them!
