What colors do you have? The basic primary colors?

What are you coloring - frosting? Fondant?

I would suggest trying a little sample portion on the side. Try mixing together in small amounts- Red and Yellow, which will give you orange.

Than add a small amount of blue little by little until you get the shade of brown you want.

Try mixing blue and yellow to get green and add red to make brown.
