Ganache--How Far In Advance Of Use....

How far in advance of use can I make chocolate ganache? I need it for a cake on 8/1. It will be covered with fondant. How long will it stay fresh and good? When can I make it? Can I make it this week?
Should I refrigerate it? If so, what do I do to it after I take it out of the refrigerator?
How long can the ganache/fondant decorated cake stay out?
So many questions!

ganache can be frozen. When you want to use just take it out of the freezer the night before and let it thaw.

Thanks, charmed. I'll be without a kitchen for a while and freezing the ganache will help!
