How far in advance of use can I make chocolate ganache? I need it for a cake on 8/1. It will be covered with fondant. How long will it stay fresh and good? When can I make it? Can I make it this week?
Should I refrigerate it? If so, what do I do to it after I take it out of the refrigerator?
How long can the ganache/fondant decorated cake stay out?

ganache can be frozen. When you want to use just take it out of the freezer the night before and let it thaw.
