Ok, I am new to the world of diabetic baking. I had a last minute request for a cake and they want a basketweave design using diabetic friendly icing. Can anyone give me a tried and true recipe that is tasty but still able to be piped? I don't have that much time to do a lot of trial and error so I am hoping someone out there can help me out! TIA!

I just happened to come across a picture in the Birthday Cakes gallery right before reading this post. It's by stylishbite and she used a diabetic icing that she says worked really well. It was 3 years ago, so I don't know if she still uses this site, but it's worth a shot to send her a PM about it.
