Is there a tip you can share to keep the fondant from becoming so dry once on the cake?
On Cake Boss why was he steaming the fondant? Was it to make it shine or keep it moist?
You steam the fondant or gumpaste to set the colour when dusting and to add sheen.
The fondant will naturally harden on the outside when it is exposed to the air. The inside takes a while to harden.
To keep it from really drying a lot. don't use too much powdered sugar when rolling it out. Try to brush off as much as possible before applying it to the cake.
