I have a wedding cake due Saturday. Can I bake the cakes Wednesday, put them wrapped in saran wrap in the fridge after cooled? I really don't want to freeze them. Then I plan putting the crumb coat on Thursday and completing with fondant and buttercream piping on Friday. Is this OK???? Any help is very much appreciated! Thanks!

putting your cake in the fridge will dry it out. freezing will keep the cake nice and fresh and won't dry it out. why not freeze?

you can still take your cake out thursday and be ready to decorate by the time you get buttercream mixed up.

Thank you! I was really worried about this. I will freeze and decorate Thursday and Friday!

I had mines refrigerated and didn't dry out. As long as it is properly kept (layers of plastic wrap and then put in a bread bag, ziploc bag or foil for bigger cakes) then it will still stay moist.
