how do i stop my sponge cake sinking in middle after its risen?
my recipe is 8oz caster ,butter,self raising flour and 4 eggs then bake 180 for 20mins till risen firm to touch,cake rises lovely but sinks when cooling tastes lovely and is very light just annoyed by sinking?
one of the reasons cakes sink in the middle is because it was not fully cooked before it was removed from oven or deflation from overmixing. another reason could be that something wrong with the leavener (too much of it). sometimes the oven is too hot. if you have a oven thermometer check that you have the correct temperature.
