i have never in my life made or even tasted a lemon flavored cake before, lol, anyway so i had a bday cake last week (the mario one in my pics) and she wanted lemon with rasberry filling. i made a practice one beforehand and let it sit on the counter for 3 days and ate it just to make sure it would be ok sitting out becuase it had to be done thursday for the party saturday and it had fondant on it. i used rasberry jam mixed with bc for the filing and it tasted awesome!!!! the one i made for the party howver i forze like a do with all my cakes and it didn't taste near as good as the first on i made for testing it also had a crumbly type of texture to it. does all lemon cakes have that texture or did i do something wrong? the only thing i did differently was freeze it before filling and icing. any ideas? i did use the box mix on this one.
