A friend of mine is making cupcakes for her wedding.. she asked me how long in advance she could bake them, and freeze them. She doesnt want the stress of doing it all the week before.. So she'll pull them out of the freezer and ice them.. but.. how far in advance can she make them, and what is the best way to seal them so they arent damaged during freezing?? Any opinions??

Thank you!!

I have frozen cupcakes up to one month and they are perfectly fine. But the best way to freeze them is in an airtight container wrapped with aliminium foil. When it comes time to defrost them pull them out as is and let them defrost in the container. I usually pull out the night before decorating.

I'm pretty sure that the standard for baked goods is 3 months int he freezer...but that is just by memory alone, I can't site facts...
