Tricky Cake....

Hello...I have an upcoming order for a 4 layer wedding cake. The bride would like smbc frosting but would like a damask like pattern on it. What would be the best way to acheive this on smbc? I was thinking of chilling the frosted cakes and then going over it again with a template and offset spatula...or would an embossing mat be a better route?

Help please...don't have long to go...

I think a template would be better. You would just have to work fast. I have been toying around with this idea so I am anxious to see how it turns out.

Thanks bakery_chick....I was thinking that if I chilled (in the freezer) so it was very hard...then it would be easier to go over with a stencil (and hopefully leave less marks on the bottom icing. I agree with you though...I would have to work fast. Now I just have to find a damask stencil. I guess I could also pipe-on a pattern...but smbc can be fussy and I don't find it great for "fine" detail work.
