I'm wondering how people carve the cakes to make them smaller at the bottom than top. Are there any videos that explain the process?

If you mean a topsy turvy cake you can go to youtube and search for topsy turvy cake she made a very nice video on how to do one.

I just made one (see photos). I baked 6, 7, and 8 inch rounds, then I stacked the smallest on the bottom and largest on top and did some shaving and shaping along the sides to get it to be nice and smooth.
