Looking for a tasty eggless vanilla cake recipe.....thanks!
My son has a egg allergy so here is the one I use - I omit the cocoa when I need a yellow cake and I use applesauce (he likes it) I switch the flavoring up to give him something different (orange, hazelnut, almond).
1 1/2 c. flour
1 c. sugar
1/4 c. cocoa
1 tsp. baking soda
1/4 tsp. salt
1 c. water
1/4 c. applesauce or vegetable oil
1 tbsp. vinegar
1 tsp. vanilla
2 tbsp. powdered sugar
Preheat oven to 350 degrees. Combine flour, sugar, cocoa, soda and salt. Add water, vinegar, and vanilla and stir until smooth. Pour into a greased and floured 8-inch square pan. Bake for 35-40 minutes or until cake tester comes out clean.

My son also has an egg allergy and my daughter cannot have dairy. I just bought a Vegan Baking book: "The Joy of Vegan Baking" by Colleen Patrick-Goudreau. I make my first cake from the book today and it turned out quite well. You can also try baking a cake mix with 1 can of soda. No oil, eggs or water needed. I won't make a large cake very well, but it is easy and allows you to use lots of flavors. Good luck!
